Things to Remember While Making Your Perfect Lassi:

  • When choosing mangoes to make the lassi, use the mangoes that are very ripe. Otherwise, your lassi may taste too sour for your liking. So, you may need to add extra honey or sugar to balance the taste.

  • If you put chopped mangoes in the blender cup, the chances are that the lassi will be too thick and creamy for you. You can make it smoother if you dice or mince the mangoes before letting the blender have a go at it. It should be syrupy and pulpy without any trace of a chunk of mango.

  • You can also use frozen mangoes or canned mango pulp for the lassi.

  • If you are using canned mango pulps to make your lassi, read the label to verify it is already sweetened. If they are, then you may need to cut down the proportion of sugar or honey in your lassi. Or else, it will be too sweet for your liking.

  • If you are not into cardamom, you can substitute it with 1 tablespoon of rosewater or 8 to 10 strands of saffron.

  • Needless to say, but your yoghurt should be chilled to have a better taste.

  • You can use low-fat or skimmed milk yoghurt for the lassi. But, the whole milk yoghurt is responsible for providing the creamy consistency of the lassi.

  • While unlikely, many people prefer having 2 to 3 tablespoons of cream to get a richer texture in their lassi. You may give it a try too.

  • Before serving, taste the mixture to check if it is too sweet or sour. If it is not sufficiently sweet for you, you can add a couple of teaspoons of sugar or honey to adjust the taste. Blend it again, and then, check if it is okay. If it is, then you can serve it.

So, now you have the lovely recipe for sweetness. You can enjoy your mouth-watering glass of lassi with your loved ones. Since this recipe is a serving for two, you can adjust the proportions of the ingredients accordingly to make more if you have more family members at home or if you have invited some friends over to your place.
